1. Eggplants like mushrooms



Ingredients:
2 kg eggplant
1 head garlic
250-300 g dill
1.5 cups sunflower oil
8-10 tbsp. vinegar 9%
1.5-2 tbsp. salt
2.5 l water

Directions:

Put a large pot of water on the gas, add salt, pour the vinegar, and boil.
Eggplant cut the cubes about 1.5 cm and put in the boiling brine. 
Boil the eggplants in the brine for 5 minutes, and then drain into a colander and leave to drain about 1 hour. Cool it down.
Grind dill, garlic and mix with eggplants and vegetable oil.
Lay the eggplant "like mushrooms" in jars, close the lid and put it in the fridge.
Eggplants are kept in the refrigerator for 2 weeks
